You can get people to pick up items that are scattered around the map for your caravan by placing a stockpile over each one, however it will add to your preparation time. That way, one person doesn't hold up the whole caravan. If there is a real danger of someone in your caravan having a mental break, you can send each colonists out in a separate caravan and combine them when you get out. If you leave them on the other side of the map, especially on larger maps, it could take most of the day for one of your colonists to go to them and lead them back. If you're taking animals with you, zone them all close to your caravan assembly point (usually somewhere close to the centre of the map), and wait for them to get there before sending the caravan off.
